21 Day Fix Approved Vegan Minestrone

This soup is AH-mazing! It was the perfect meal for a cold winter night but it would be equally perfect for lunch/dinner any time of the year too! You don’t have to be completing the 21 Day Fix to enjoy this soup either. The fact that you CAN have this delicious soup while following the plan is just awesome in general. It is vegan, gluten free, and vegetarian friendly.

Ingredients
  1. 1 large yellow onion, chopped
  2. 4 cloves garlic, minced
  3. 2 ribs celery, diced
  4. 2 medium zucchini, diced
  5. 6 cups low sodium vegetable broth
  6. 1 (28 oz) can diced tomatoes (no salt added)
  7. 1 (15 oz) can cannellini beans, drained & rinsed
  8. 1 box quinoa elbow pasta
  9. 1/4 teaspoon garlic powder
  10. 1/4 teaspoon onion powder
  11. 1/4 teaspoon dried basil
  12. 1/4 teaspoon dried parsley
  13. 1/4 teaspoon sea salt
  14. 1/4 teaspoon black pepper
Instructions
  1. Add all of the ingredients (minus the pasta) to a large soup pot, bring to a boil, reduce heat to simmer, covered, until vegetable are tender, about 25 minutes.
  2. Cook the pasta in a separate pot according to package directions. Make sure you do not overcook the pasta!
  3. Ladle 2 cups of soup into a bowl. Measure out one yellow container of pasta and stir it into the soup.
  4. Enjoy!
Notes
  1. One serving is 2 green containers and 1 yellow container.
