Apple Coconut Muffins

Is there anything better than a freshly baked muffin?! Ok, maybe a freshly baked brownie but I will get to those later! I picked up this organic apple butter from Whole Foods just because it sounded delicious. When I got home I wasn’t sure what to do with it since I don’t eat bread regularly. So what was I going to put this stuff on? Fruit? No. Vegetables? Definitely not. Muffins? Absolutely! Then I started thinking, what if I put the apple butter IN the muffins too? I swear, sometimes I amaze myself haha. 

Apple Coconut Muffins

Ingredients
  1. 1/2 cup coconut flour
  2. 1/2 melted coconut oil
  3. 2 tablespoons apple butter (or applesauce)
  4. 4 eggs
  5. 1 teaspoon baking powder
  6. 1/2 teaspoon baking soda
  7. 2 teaspoons apple cider vinegar
  8. 2 tablespoons pure maple syrup
Instructions
  1. Preheat your oven to 350 degrees.
  2. Combine flour and oil first then add in other ingredients. Mix until smooth. Divide batter into a greased muffin pan.
  3. Bake for 20 minutes.
  4. Enjoy!
