Avocado & Black Bean Quesadillas


These were so quick to make but so freaking good! I love meals like this especially after an extra busy day where I didn’t feel like cooking. I could have easily ordered some not-as-healthy take out but it took less time to prepare these than it would have to order in. You CAN make healthy and delicious food in a short amount of time. Boom! I used gluten free tortillas but you could easily just swap out flour ones if gluten isn’t a concern for you.

Avocado & black bean quesadillas

  1. 8 gluten free or flour tortillas
  2. 1 15-ounce can black beans, rinsed and drained
  3. 2 avocados
  4. juice of one lemon
  5. 1/2 cup chopped green onions
  6. 1 medium tomato, finely diced
  7. 1/8 teaspoon garlic powder
  8. coconut oil or butter for cooking
  1. In a large bowl mash the avocados with the lemon juice. Stir in garlic powder, black beans, tomato, and green onions. Mix until combined.
  2. Preheat a large skillet over medium heat. Add enough butter or oil to coat pan.
  3. Spread 1/4 of the avocado mixture on a tortilla then top it with another tortilla.
  4. Cook quesadilla until golden brown, 2-3 minutes and then flip and repeat.
  5. Repeat for remaining tortillas.
  6. Cut into quarters and top with extra green onions and hot sauce if desired.
  7. Enjoy!
