Black Bean Fajitas

These fajitas are the bomb dot com. Meat eaters and meat free-ers will love them! I guess they are a combination of a taco and a fajita but fajita sounds fancier. LOL!  Try these out on your next Taco Tuesday or Meatless Monday and let me know what you think! 

Black Bean Fajitas

  1. 6-8 tortillas, flour or corn
  2. 1 14.5-ounce can black beans, rinsed and drained
  3. 2 red bell peppers, thinly sliced
  4. 2 large onions, thinly sliced
  5. 1 Tablespoon Extra Virgin Olive Oil
  6. 1 Tablespoon chili powder
  7. 1 teaspoon cumin
  8. 1/8 teaspoon smoked paprika
  9. 1/4-1/2 cup of water
  10. guacamole, store bought or homemade
  11. 2 tomatoes, diced
  12. arugula
  13. optional: hot sauce
  1. Put beans and 1/4 cup of water in a small sauce pan. You want the water to just cover the beans so add more if necessary. Add chili powder, cumin, and smoked paprika. Simmer covered while peppers and onions cook, about 10 minutes.
  2. In a large sauce pan heat the olive oil over medium heat. Add the peppers and onions and cook until softened. Season with salt and pepper if you prefer.
  3. Layer guacamole, beans, and peppers/onions on the tortilla then top with tomatoes and arugula.
  4. Enjoy!
