This Chocolate Chip Quinoa & Oatmeal Muffins are the BOMB!
1 cup cooked quinoa, cooled
2 cups gluten free oats
1 teaspoon baking powder
¼ teaspoon salt
1 large egg
1 cup almond milk (any milk works)
2 teaspoons vanilla extract
½ cup Enjoy Life chocolate chips
Optional: 2-3 packets of Stevia
Combine quinoa, oats, baking powder, and salt in a large bowl. In a separate bowl whisk together egg, almond milk, and vanilla. Combine wet and dry ingredients and stir in chocolate chips. Fill muffin cups until full since these muffins will not rise. I used paper liners (Minnie Mouse ones to be exact! LOL) but you could just grease the cups instead. Bake at 350 degrees for 30-35 minutes until set and cooked through.
TRY to let them cool before eating. It was definitely hard to do!
