Curried Cauliflower Soup

I didn’t really start to appreciate cauliflower until about two years ago. This vegetable has such a bad rep. It smells, it wants to be like broccoli but isn’t cool enough, it gives you gas, it tastes like feet, etc. I’ve heard it all! Once I took the plunge into cauliflower I fell in love and needed to make it as many ways as possible. I came across this recipes from Cookie + Kate and knew right away it was going to be a winner. I tried it the first time with red curry paste like the recipe called for but I didn’t love the taste of it. I decided to try again with yellow curry powder and it was perfect! It’s up to you which curry you decide to use but I can almost guarantee you will love it as much as we do. Give it a try and let me know what you think!

Curried Cauliflower Soup

Ingredients
  1. 1 large head of cauliflower, broken into small florets, stems chopped
  2. 1 Tablespoon Extra Virgin Olive Oil
  3. 1 medium onion, chopped
  4. 2-3 Tablespoons red curry paste or 2-3 Tablespoons yellow curry powder
  5. 1 small lemon, zested
  6. 1.5 cups vegetable broth or stock
  7. 1 14 ounce can coconut milk
  8. 1 bunch scallions, chopped. Greens for garnish, whites go in the soup
Instructions
  1. Preheat oven to 400°.
  2. Toss the cauliflower with the olive oil. Spread out in a single layer on a parchment lined baking sheet. Season with salt and pepper. Roast until the tips of the cauliflower are golden, about 25 to 30 minutes.
  3. In a large soup pot add broth, onion, coconut milk, whites of scallions, and curry powder. Bring to a boil then reduce heat and simmer until vegetables are tender, about 10 minutes. Add all of the cauliflower stems and half of the florets to the pot. Cook, stirring until heated through.
  4. Use an immersion blender or food processor to blend until smooth.
  5. Ladle the soup into bowls. Top each with cauliflower florets and scallions.
  6. Enjoy!
