Gluten Free Vegetable Dumpling Soup

Looking for a quick and delicious soup? This is it! I got a little (or a lot) of help from the frozen section for this one with frozen vegetable dumplings. Ain’t nobody got time to make homemade dumplings. Or maybe you do? Then go for it! If you use the frozen dumplings this soup is ready in 20 minutes.

Gluten Free Vegetable Dumpling Soup

Ingredients
  1. 1 package frozen gluten free dumplings (or homemade if you desire)
  2. 4 cups vegetable broth
  3. 1 15 ounce can coconut milk
  4. 1 Tablespoon soy sauce
  5. 1/8 teaspoon sesame oil
  6. 1 red bell pepper, diced
  7. 1 bunch green onions, chopped, whites and greens separated
Instructions
  1. In a large pot combine broth, coconut milk, soy sauce, sesame oil, peppers, and white parts of green onions. Bring to a boil then reduce to simmer, covered, until peppers are tender, 10 minutes.
  2. Meanwhile, prepare dumplings according to pack directions. I steamed mine in a pan with water.
  3. Divide dumplings between bowls. Ladle broth over dumplings and garnish with remaining green onions.
  4. Enjoy!
