Lentil Taco Pie


I am a huge fan of tacos. We celebrate Taco Tuesday every week! I am always look for a new and interesting way to have tacos that fit into the grain-free lifestyle. I was scouring Pinterest looking for meatless grain-free tacos and as I’m sure you can imagine, there were not many hits. LOL! I kept coming across recipes for taco pie and taco casserole that called for ground meat and that is when inspiration hit me. I have said this before but I have a knack for taking a recipe and adapting it to fit my dietary preferences. Swap out the tortillas for mashed potatoes, swap out the beef for lentils, leave out the cheese, etc. And that is how Lentil Taco Pie was born!

Taco Seasoning
  1. 1 Tablespoon chili powder
  2. 1/4 teaspoon garlic powder
  3. 1/4 teaspoon onion powder
  4. 1/8 teaspoon paprika
  5. 1.5 teaspoons cumin
For Lentil Pie
  1. 1 cup uncooked lentils
  2. 3 cups of water
  3. 2 idaho potatoes, peeled and cubed
  1. guacamole, homemade or store bought
  2. 2 tomatoes, diced
  3. 1 head of romaine lettuce, shredded
  4. optional: hot sauce
  1. Preheat your oven to 400°.
  2. Place lentils in a sauce pan with 3 cups of water and bring to a boil. Reduce heat and simmer until tender, about 20 minutes.
  3. While the lentils cook, boil the potatoes until fork tender. Reserve a cup of cooking liquid, then drain the potatoes and mash them. Add a little bit of the cooking liquid to the potatoes as you mash them to get them smooth. Season with salt and pepper.
  4. Grease/spray a 9x9 baking dish. Press the mashed potatoes to the bottom and sides of the baking dish to form a crust. Bake in the oven until it firms up, about 15 minute minutes.
  5. Drain the lentils and add the taco seasoning. Add 1/4 cup of water to the pain and let it simmer for 2-3 minutes until the lentils are coated with the seasoning.
  6. Pour the lentils into the potato crust. Bake in the oven 15 minutes.
  7. Spread a layer of guacamole over the lentils then top with tomatoes and lettuce.
  8. Enjoy!
