Why hello there, protein muffins! I stumbled across this recipe while looking for healthy snack ideas for one of my beautiful friends and decided I needed to give them a whirl. They are delicious!
4 scoops protein powder of choice (I used chocolate)
1 cup of egg whites (about 8 egg whites)
2 teaspoons baking powder
1 teaspoon vanilla extract
1/2 cup Greek yogurt or 1/2 cup milk (I used almond milk)
Optional: 1-2 tablespoons sweetener, I did not do this but next time I will add some raw honey or organic maple syrup.
Mix dry ingredients together and then stir in wet until well combined. Fill muffin cups half way and bake at 350 degrees for 12-15 minutes.
You can also add nut butter, mashed banana, frozen berries, shredded coconut, extra cocoa powder, or experiment with different flavored extracts.
