Sesame Stuffed Portobello Mushrooms


We had a busy day today and I honestly did not feel like cooking so this was perfect! It is so easy to throw together because I used a lot of grocery store short cuts. Organic coleslaw mix in a bag, organic teriyaki marinade, and lemon shallot vinaigrette make this dinner (or lunch!) possible to have on the table in 15 minutes. Rub the Porto caps with the teriyaki marinade and then bake them in a 400 degree oven for 10 minutes. Mix the coleslaw mix with almonds and scallions then toss with the vinaigrette and boom- dinner is DONE! You can have healthy meals when you are short on time or in my case just feeling lazy!

Sesame Slaw Stuffed Portobello Mushrooms

  1. 1 bag coleslaw mix
  2. 1 cup sesame dressing
  3. 1/4 cup sliced almonds
  4. 1/4 cup chopped green onions for garnish
  5. 4 portobello mushroom caps, stems and gills removed
  6. 1 cup teriyaki sauce/marinade
  1. Preheat oven to 400°.
  2. Coat mushroom caps with teriyaki sauce/marinade. Place on a parchment lined baking sheet.
  3. Bake until tender, 10 minutes.
  4. Meanwhile, in a large mixing bowl combine coleslaw mix, sesame dressing, and almonds. Stir until well combined
  5. Top each mushroom cap with slaw and garnish with green onions.
  6. Enjoy!
