Sweet Potato, Lentil & Quinoa Loaf

We don’t eat soy meats so I need to get creative when trying to find vegetarian substitutes for traditional meals. While I never really enjoyed meatloaf as a kid and this loaf tastes nothing like an actual meatloaf, it still brings back childhood memories for me. I think every person has at least once memory of their parents serving meatloaf. There’s something about a slice of loaf and a side of veggies that makes me get all warm and fuzzy inside.

Serve this with greens or a salad. 

Sweet Potato, lentil & quinoa loaf

Ingredients
  1. 2 cups of cooked red lentils (1 cup dry lentils with 2 cups of water)
  2. 2 cups of mashed sweet potato
  3. 2 cups of cooked quinoa (1 cup dry quinoa cooked with 2 cups of water/broth)
  4. 1 medium onion, finely chopped
  5. 3 minced cloves of fresh garlic or 2 teaspoons of dried garlic powder
  6. 1/4 cup finely chopped fresh parsley
  7. 1 Tablespoon of olive oil
  8. 1/2 teaspoon black pepper
  9. 1/2 teaspoon ground cumin
  10. 1/2 teaspoon paprika powder
  11. dash of cayenne pepper or more if you like
  12. 1 teaspoon chili powder
  13. 1 teaspoon Italian seasoning blend or dried thyme
Instructions
  1. Preheat your oven to 350°.
  2. Put all ingredients in a large mixing bowl. Mix until thoroughly combined
  3. Put in a greased loaf pan
  4. Bake for 1 hour. Let it set for 3-5 minutes before slicing.
  5. Enjoy!
