Vegan Cherry Oat Bars

I spent some time this morning making these gluten free and vegan cherry oat bars for my husband. I’m surprising him with them because they are his favorite! I’m not a good baker AT ALL but even I can make these, ha! They turned out great! He loves the Michigan oat cherry bars from Starbucks so I have been on a mission to make a vegan version. They are a little different than the ones that you can get at Starbucks but they are still delish!

Cherry Filling
  1. 1 10 ounce bag frozen cherries, defrosted
  2. 1/4 cup pure maple syrup
  3. 1 Tablespoon orange juice
  4. 2 Tablespoons arrowroot starch
  5. 1/2 teaspoon vanilla extract
For the oats
  1. 1 cup vegan butter
  2. 1.5 cups gluten free oat flour (ground dry gluten free oats)
  3. 1.5 cups gluten free oats
  4. 1 cup brown sugar
  5. 1 teaspoon baking powder
Instructions
  1. Preheat oven to 350°.
  2. Put cherries, orange juice, and maple syrup in a small sauce pan. Simmer until cherries start to break down, 5-7 minutes. Mash them with the spoon a little bit. Whisk in arrowroot starch and vanilla, stirring constantly to avoid clumps, until thickened.
  3. In a large bowl combine all ingredients for the oat crust. Mix the butter in thoroughly with either a fork or your hands. Some chunks of butter are ok.
  4. Press half of the oat mixture into a greased 8x8 pan. Pour cherry mixture over the crust and spread in an even layer. Sprinkle with second half of oat mixture and gently press it down.
  5. Bake until lightly browned, 30-40 minutes.
  6. Enjoy!
