Vegetarian Protein Bowls


This might not look pretty but it is so good. I get asked all.the.time. how I get my protein since I don’t eat meat. It was even worse before I started eating eggs again. Take a look at this picture, that’s my protein right there! Even if I left the eggs out it is still protein and nutrient packed. You have quinoa, greens, and healthy fat. Boom. This cooks up pretty quickly too, the longest step is waiting for the quinoa to be done. Fast and easy dinners are the best!

Vegetarian Protein Bowls

  1. 1 cup uncooked quinoa
  2. 2 cups vegetable broth
  3. 1/4 teaspoon garlic powder
  4. 1/4 teaspoon onion powder
  5. 1 bunch kale, stems removed and chopped
  6. 2 cups baby spinach
  7. 1 bag frozen broccoli florets
  8. 4 eggs
  9. 1/2 cup grapes tomatoes, quartered
  10. 1 avocado, diced
  11. 1 Tablespoon coconut oil or olive oil
  1. Place quinoa, water, garlic powder, and onion powder in a sauce pan. Bring to a boil then reduce heat and simmer covered until fluffy.
  2. Meanwhile, heat coconut oil in a large skillet over medium heat. Add frozen broccoli and kale. Saute until tender. Add spinach and stir until wilted. Beat eggs in a small mixing bowl and then stir into the pan. Scramble the eggs with the vegetables. Season with salt and pepper.
  3. Divide quinoa between two bowls. Top with egg and vegetable mixture. Top with avocado and tomatoes.
  4. Enjoy!
